im wondering if theres a way to make coastal undercuts like shown below directly next to water and also on beaches

Not inside world machine, or any other “heightfield based” terrain modelling app, no.
All effects in WM (and by extension, all terrain modelling apps) go in one direction, UP (z-axis, perpendicular to the horizontal xy-plane).
You can make any such overhangs (caves, cliff faces, coastal undercuts, etc.) using another 3D sculpting app like zbrush, or Blender.
This is something that someone should look into at world-machine, as undercuts falls into the same category and importance cutting in as erosion does for cutting/effecting down. Or maybe as part of the development workflow with some natural-ish undercut erosion in Blender(Geometry Nodes + Heavy Simulation Scripting) or Zbrush (With whatever they got over there).

I’ve been reflecting on this—it’s a question that tends to come up every now and then.
Maybe it is possible……..
It is possible to use the meshify nod and combine them???
